Portobello pizza is an easy and delicious way to make keto stuffed mushrooms!


  • 4 Portobello mushroom caps stem removed
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • pepper to taste
  • 4 tablespoons marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes sliced
  • 1 ounce turkey pepperoni cut into fourths

    1. Heat your broiler or outdoor grill.
    2. Drizzle olive oil over both sides of mushroom caps. Sprinkle with salt and pepper to taste.
    3. Broil or grill 5 minutes on each side.
    4. Top each cap with 1 tablespoon tomato sauce, 1/4 cup of cheese, 1/4 cup of sliced tomatoes and evenly divide up pepperoni to each.
    5. Broil or grill 2-3 minutes until cheese is nicely melted.
    6. Top with fresh basil if desired.


    I find using dry cheese such as shredded mozzarella gives the best results. Using fresh mozzarella may cause the mushrooms to release some liquid during the broiling / grilling process.
